CARDAMOM-SPICED BLACKBERRY PEACH CRUMBLE

SERVES 6 TO 8 | PREP, COOK TIME: 1 HOUR

INGREDIENTS

THE TOPPING:

8 OZ.  CINNAMON GRAHAM CRACKERS

2 TABLERSPOONS AP FLOUR

2 TABLESPOONS WHITE SUGAR

SALT, PINCH

6 TABLESPOONS BUTTER (MELTED)

THE FILLING:

2 ½ POUNDS FRESH PEACHES, SLICED

3 TABLESPOONS HONEY

1 TABLESPOON CARDAMOM

LEMON ZEST, LEMON JUICE FROM 2 LEMONS

SALT

1 POUND FRESH BLACKBERRY

 

TECHNIQUE

PREHEAT OVEN TO 375 DEGREES.

THE TOPPING:

IN A FOOD PROCESSOR ADD GRAHAM CRACKERS, FLOUR, SUGAR, AND SALT; SLOWLY ADD MELTED BUTTER UNTIL MIXTURE IS CRUMBLY.  SET ASIDE.

THE FILLING:

IN A LARGE MIXING BOWL, TOSS TOGETHER PEACHES, HONEY, CARDAMOM, LEMON ZEST, LEMON JUICE, AND SALT – NEXT, WITH YOUR HANDS, SQUEEZE THE BLACKBERRIES INTO THE MIXTURE, TOSS TO COAT. 

PLACE THE FRUIT MIXTURE IN A CAST IRON SKILLET OR CERMAIC BAKING DISH, TOP WITH CRUMBLE MIXTURE, THEN BAKE IN 375 DEGREE OVEN FOR 45 MINUTES OR UNTIL BUBBLING AND JAMMY.  SERVE WITH VANILLA ICE CREAM OR FRESH WHIPPED CREAM.
