Handmade Caesar Dressing

Anchovies are your friend; and even though at first glance they may be a smidge off-putting to some, if you’re a fan of authentic Caesar Salad, then you’re definitely a fan of anchovies. These wonderfully complex fish are absolutely critical to the success of Caesar Dressing, offering depth of fllavor, a taste of the sea, and a power punch of salt. Our recipe is relatively easy, and with the help of a friend or family member, you can enjoy authentic Caesar Dressing in minutes.
INGREDIENTS
6 anchovy fillets packed in oil, chopped
2 large garlic cloves, chopped
1 teaspoon (or more) kosher salt
2 large egg yolks
4 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
1/2 cup olive oil
1/4 cup Parmesan, finely grated
1 teaspoon fresh parsley, chopped
Fresh cracked Pepper, to taste
TECHNIQUE
Place anchovies, garlic, and salt on a cutting board. Smash and chop until well combined and smooth paste forms. The more combined, paste like the better…you can’t over mix these ingredients.
Next, whisk together egg yolks, lemon juice, and mustard in a medium bowl. Use a wet towel under the bowl to keep it in pace as you whisk. You may also use a small food processor here if you would like, but we prefer to do it by hand. However, this next part may require a friend or family member to help.
Slowly drizzle and whisk a few drops of oil into yolk mixture until mixture looks slightly thick and shiny. Slowly continue this process, whisking gradually until mixture looks like mayonnaise. At this point, add a splash of water to the mixture so that it has more of the thickness of heavy cream.
Finally, add anchovy mixture and Parmesan cheese and whisk and combine until smooth. Taste and adjust seasoning with salt, parsley and fresh cracked pepper.
