Slow Your ROLLS

High South Rolls  

SERVES: 6 TO 8 | PREP, COOK TIME: 90 MINUTES

INGREDIENTS

4 -5 cups all-purpose flour

2 tbsp yeast

1/3 cup granulated sugar

2 tsp salt

1 1/2 cups warm milk 

5 tbsp butter, room temperature

1 egg

2 tbsp melted butter

2 tbsp honey 

Technique 

Combine 3 cups of flour, yeast, sugar, salt, warm milk, butter, and egg in the bowl of a stand mixer.  With dough hook, mix on low speed until flour is completely incorporated. 

Increase speed a bit, then add 1/2 cup flour increments until dough ball forms.  The ball should be slightly sticky, but not shaggy.  Transfer dough ball to a greased bowl and cover; allow to rise for about 30 minutes. 

Punch down dough, then form into 24 equally sized dough balls; transfer to a greased baking dish; re-cover, and allow to  rise for another 30 minutes. 

Meanwhile, preheat oven to 375 degrees; then bake the rolls for approximately 20 minutes or until golden brown.

Finally, brush the warm rolls with the melted butter and honey. Serve warm with dinner; but also great as bread for “next day” turkey sandwiches.
