Seeded Black Lentils with Greek Yogurt and Mint
Onward and upward in 2021! What a crazy year we’ve had, so we have no problem subscribing to foods that have been foretold to bring good luck and prosperity. This new year’s vegetarian recipe is the bomb, plus Lentils are traditionally served on New Year's Eve after midnight and are said to bring good luck because of their coin like shape. Cha-ching!
Seeded Black Lentils with Greek Yogurt and Mint
Serves: 4 to 6 | Prep: 1 Hour
INGREDIENTS
½ tsp. coriander seeds, crushed
½ tsp. cumin seeds, crushed
½ tsp. mustard seeds
2 tbsp.olive oil 1
1 small yellow onion, diced
2 cloves garlic, finely chopped
1 cup black lentils
3 cups vegetable broth
1 teaspoon sherry vinegar
Salt, freshly ground black pepper
1 cup plain Greek yogurt
½ cup fresh mint leaves, chopped
TECHNIQUE
Stir coriander, cumin, mustard seeds, and 2 Tbsp. oil in a medium saucepan over medium-high heat until sizzling, about 1 minute. Add onion and garlic; cook, stirring often, until just softened, about 5 minutes. Add lentils and 3 cups broth; bring to a boil. Reduce heat and simmer, partially covered, adding broth as needed to keep lentils covered, until lentils are soft, 30–40 minutes. Stir in vinegar; season with salt and pepper.
Transfer lentils to a large bowl and top with yogurt. Season with salt and pepper, drizzle with oil, and top with mint.
