RED CURRY SESAME CHICKEN WINGS

RED CURRY SESAME CHICKEN WINGS

SERVES 4 TO 6 | COOK, PREP TIME 50 MINUTES

INGREDIENTS

4 pounds chicken wings, joints separated

2 tablespoons extra-virgin olive oil

1 tablespoon sesame oil

Salt and freshly ground pepper

6 tablespoons unsalted butter, melted

1 tablespoon BLUE ELEPHANT Thai red curry paste

1 tablespoon honey

Juice and finely grated zest of 1 lime

1 teaspoon soy sauce

2 tablespoons EDEN SHAKE

2 green onions, chopped

TECHNIQUE

Preheat oven to 450°. In a large bowl, toss the wings with olive oil, sesame oil, salt, and pepper - then transfer to two sheet pans with parchment. Bake for about 45 minutes, or until browned and slightly charred.

While the wings are cooking, in a large bowl, blend together the butter with the curry paste, honey, lime juice and zest and soy sauce. When the wings are complete, remove from oven, transfer to a bowl and toss with the red curry butter until completely coated. Transfer the wings to a platter, top with EDEN SHAKE and chopped green onions, then serve.
