LEFTOVER TURKEY SAMMIE WITH GREEN CURRY MAYO
SERVES: 2 | PREP TIME: 10 MINUTES
INGREDIENTS
1 cup mayonnaise
1 2.4 ounce pouch BLUE ELEPHANT Thai green curry paste
1 ½ tablespoons fresh lime juice
1 cup leftover cranberry sauce
2 sprigs fresh sage, chopped
2 sprigs fresh thyme leaves, minced
4 slices whole grain bread or leftover rolls
1 pound leftover turkey breast, sliced with skin on (optional)
1 cup leftover stuffing
TECHNIQUE
In a small bowl, whisk the mayonnaise with the BLUE ELEPHANT green curry paste and lime juice. In another small bowl, whisk together the leftover cranberry sauce with the sage and the thyme.
Spread some of the curry mayonnaise on one side of the bread. Layer with the cranberry sauce, sliced turkey, and stuffing. Press together and enjoy!
