GHEE SEARED SEA SCALLOPS

Regardless, nothing is simpler than this four ingredient technique for making the ESSENTIAL Seared Sea Scallop.
GHEE SEARED SEA SCALLOPS
Serves: 2 | Cook Time: 15 Minutes
INGREDIENTS
1 pound fresh sea scallops
salt and fresh ground pepper, to taste
2 tablespoons olive oil
2 tablespoons ghee
TECHNIQUE
Line a sheet pan or large platter with either a clean dish towel or two layers of paper towels; place scallops on the towels, then cover the scallops with another layer of dry towels and gently press down on the scallops to remove any excess moisture.
Heat the oil in a large non-stick skillet over medium high; season the scallops generously with salt and pepper, the add one at a time to the hot pan; Cook the scallops on the first side for about two minutes or until golden brown.
Flip the scallops, slightly reduce the heat, then add the ghee. Once melted, baste the scallops with the ghee for about a minute or until opaque.
Transfer the scallops to a platter; then serve alone with a squeeze of fresh lemon juice or next to your favorite salad.
