FIGS ON TOAST

Mmmm - figs on toast; so simple, but always a cocktail party favorite. This recipes calls for ricotta cheese and fig preserves…but it’s also exquisite with gorgonzola and orange marmalade. I’ll be preparing a similar version next month at Blake Street House for an early Valentine’s Day takeover with kasundi…a delicious Indian tomato sauce that is nothing short of culinary nirvana with fresh figs. Thump Thump!

FIGS ON TOAST

SERVES: 4 TO 6 | PREP, COOK TIME: 20 MINUTES

INGREDIENTS

Baguette, sliced about 1” thick

1/4 cup Olive oil

1 cup Ricotta Cheese

1/4 cup Fig Preserves

10 Figs

Honey

Sesame Seeds

Fresh Thyme

Maldon Flake Salt

TECHNIQUE

Preheat oven to 400 degrees. Generously coat both sides of sliced baguette with olive oil, place on sheet pan with parchment, and toast until golden brown. Remove from oven.

Immediately, spread toasted baguette with softened ricotta cheese. Top with a dollop of fig preserve, sliced ripe figs and drizzle of olive oil and honey. Top with sesame seeds and season with Maldon flake salt. Garnish with sprigs of fresh thyme and serve.
